Transport your taste buds to the heart of Palestine with our beloved “Musakhan” roasted chicken. Marinated with onions for hours, our succulent chicken is then roasted in the oven until tender, allowing the onions to caramelize. The best part? A bed of pita that soaks up the aromatic juices from the chicken + caramelized onions.
If you ask a Palestinian, each tender piece is meant to be torn apart by hand, creating a communal dining experience.
Topped with a delightful medley of fried pine nuts, fresh parsley, and a generous sprinkle of sumac, two roast chicken legs rest on a fresh piece of arabic pita bread. Served with a side of a Mint Tomato Cucumber Salad, whipped Garlic Sauce & Herb Basmati Rice.

By 1980, my father Sudki Abdullah had fallen in love with food. Serving it, specifically. He loved feeding people. Below you’ll see an old picture of him making his absolute favorite food to cook. Lamb/Beef Kebobs.
My dad was not just a father to me and my 4 siblings, he was also a father to the young cooks that started in his kitchen 25 years ago. Those cooks still work with us today. Safe to assume there’s a TON of love going into this dish.
